Storage and tasting tips
Ideally, this Basque cheese should be kept in a cool, dry room at around 15°C. It will keep for more than 3 or 4 weeks. If you have no choice but to keep it in the refrigerator, place your Basque cheese in a cloth in the vegetable bin. In this case, we strongly recommend that you take the Basque cheese out of the fridge one hour before eating so that it can regain all its organoleptic qualities. You can enjoy it with fig jam, black cherries from Itxassou, corner jelly... and a white or red wine, or simply on its own or with a good bread.
